WHITE RICE APPLE DESSERT


The smooth softness and refreshing fruity taste of orange zest stand out most in this flavorful dessert. It's super easy to make and, to be honest, our absolutely favourite cooked dessert. Why cooked? Because cooking makes your sweets healthier, easily digestible, and more satisfactory. 

And, if you ask: When is the best time to eat my sweets?

Around 11am or in the afternoon, around 3pm when the blood sugar tends to drop. That is the moment when a good dessert can help stabilize our mood and energy supply.

Anyhow, it's best to always allow some time between a meal and dessert, like half an hour or two hours. This way, you can prevent a.o. a bloated belly, heartburn or uneasy stomach.

You can enjoy this pudding, either warm or cooled.
Make countless variations using your favourite dried or seasonal fresh fruits.


You will need for 6 - 8 portions:
Note: 1 cup = 250ml

1/2 cup white round rice *, 1x washed and strained
2 cups apple juice
1 1/2 cup pear juice
1/4 teaspoon white sea salt *
1/2 cup raisins *, currants, or even better: try mulberries *
1/4 dried orange zest, cut in julienne or
1/2 fresh orange zest, finely grated
1 apple, cut into small cubes, keep the peel on
good sugar-free cookies *, corn flakes * or oat crunch 
mirin * or sake

Step by step:
1, Place the rice and fruit juice in the pan, cover with a lid and bring to a boil.

2, Add the salt and dried fruits, cover again, place the pan on the smallest flame using the flame distributor and cook for 40 minutes.

3, Add the orange zest and apples, stir in once gently, and let simmer for another 5-10 minutes.

4, Place the cookie/crunch on the bottom of each dessert bowl and drizzle with mirin or sake.

5, Divide the cooked pudding into individual portions.

6, Serve warm or cooled, decorated with a slice of orange, fresh mint leaves or another favourite topping.


Tips:
Next to raisins, other fruits we love to use are dried prunes, pears or apricots *.
If you find the taste of this dessert too sweet, add fewer dried fruits or dilute the juice with water.
You can also use a grain-based drink instead of fruit juice and add some almond butter * or almond flour for a richer taste. Also, leave the fruit out and use fruit jam as a topping at the end. But actually, this is another recipe, so we keep it for the next time!
